Horchata (pronounced or-CHAH-tah) is a beloved Mexican drink, often described as a sweet rice milk beverage. Traditionally made from rice, milk, vanilla, and cinnamon, this drink is a common fixture in many Mexican restaurants. The balance between the creamy rice and the warm cinnamon flavors is key, and this homemade version of horchata captures that perfectly.


Ingredients:


1 cup white rice


5 cups water


1/2 cup almonds (optional, for a creamier texture)


1 cinnamon stick (or 1 tsp ground cinnamon)


1/2 cup sugar (adjust to taste)


1 tsp vanilla extract

How to Make Horchata:


Blend


Start by combining rice, hot water, and cinnamon sticks in a blender. Blend until the rice and cinnamon are roughly ground. Add the remaining water and blend again. Pour the contents into a pitcher or container with a fitted lid and refrigerate overnight (or at least 8 hours).


Strain


After refrigerating, pour the rice mixture into a fine mesh strainer or cheesecloth over a pitcher, discarding the rice solids.


Finish Horchata


Stir in the milk, vanilla, cinnamon, and sugar to taste. Chill until ready to serve. Be sure to stir the mixture well before serving and serve it over ice for a refreshing treat.


What is Horchata de Chufa?


Dear Lykkers! Horchata de chufa is popular in Spain and differs from Mexican horchata (or horchata de arroz). While Mexican horchata is made with rice, horchata de chufa is made with chufa, also known as tiger nuts. This variation has its own unique flavor and texture.
